What would I rather do?
Of course I would rather a full-time job. If i was given the same salary, is more easier to work in a full-time job, even if every day is the same. 2 or 3 part-time jobs it´s like shooting in your foot, I couldn´t handle that kind of stress to be honest. Maybe if the salary wasn´t the same, and you were unemployed, would be worth working on multiple jobs.

This is really great! I understand everything that you’re trying to say, and you made a great effort of trying to use idioms. Idioms and metaphors in English can be confusing, even as an English speaker I can find them confusing, but that’s because I tend to think very literally. You basically just need to memorize all their meanings. Good job though!

No need to use "more" and "easier" together. They both mean the same thing. It's like saying "más extra"

I find it more natural to say "To be honest, I wouldn't be able to handle that kind of stress" and move the "to be honest" to the beginning, however both ways are understandable.

Good job! Although I think it would also depend on the job(s), I do think having one focused job could be easier and more consistent than having multiple ones to keep track of with different focuses, areas, people, etc.

For example: If I were a superhero, I would rescue people.
Another common use of "were": If I were you, I would take the train. It is faster than biking.
"Was" is used when talking about the past.
