Gym is technically short for gymnasium, but no one ever says it in full, just "gym" is better. "I ran" or "went for a run" suggests you went outside to run.

I think you mean you received your second dose of a vaccine on Monday, but this could also mean that, on Monday, you were vaccinated for the second time within this week. I would probably say "On Monday I received my second vaccination (dose)".

Changed to "I am experimenting with mice" as this shows it's a longer project you're doing generally that isn't related to your training that day.
