The Three Most Delicious Foods in My Poor Childhood

I was born and raised in a small village in a farmer's family. During my childhood, living conditions were so poor that my family didn't even have enough food to eat.

However, I can still remember three kinds of food we sometimes ate back then, and I think they were the best food for my family.

The first one was fried eggplant. We planted eggplants in our vegetable plot, so whenever we wanted to eat them, we just went to the plot and picked some. When cooking fried eggplant, we cut the eggplant into thin slices, covered them with batter, and then fried them on the side of an earthen-wok. Then we boiled them with some vegetables and sweet potato vermicelli, and then the fried eggplant was ready. As the eggplant was fried with lard, it tasted very fragrant.

The second food was soybean sprout noodles. As a family of farmers, we never lacked soybeans. Before we made soybean sprout noodles, we grew soybean sprouts first. It usually took about three to five days for them to grow, depending on the season. One thing that I still remember my mom told me was that the soybean sprouts needed clean water, and the water needed to be changed often.

When cooking soybean sprout noodles, we fried the sprouts first. We put a chunk of lard into the bottom of the wok, heated the wok until the lard melted, and at this time, put the sprouts, green onions, and ginger into the wok together and fried them for a few minutes. Then we poured water into the wok to make noodles. Soybean sprouts taste fragrant, so noodles with soybean sprouts are delicious.

The last one was Chinese chive dumplings. We cut chives from our vegetable plot, washed them, and cut them into pieces, which were used as fillings for the dumplings. Thanks to the savory chives, the dumplings were very delicious. It seems that chives were the only filling for our dumplings at that time.
