'The second day' sounds a bit formal. However, if you were going to make that phrase the title, the first letter of each of the words should be capitalised, like so: 'The Second Day'. (Normally, in a title, 'the' doesn't have a capital 'T', except when it is the first word in the title).

I know the prompt is about what MEAL you would eat, however bananas aren't technically a meal, so here it would make more sense to say food. Alternatively, you could say something like 'If I could only eat one meal for the rest of my life, it would be açaí bowls with banana on top', or some other sort of dish that includes bananas within it.
