I haven't seen sunset in a while because the weather hasn't been good recently.
However, I saw beautiful sunset yesterday.
I noticed it while driving and pulled over to take some pictures of it.
I often hear, after sunset the following day will be sunny.
I was happy because I had been waiting for the sun.
最近ずっと天気が悪かったので夕焼けを見ていませんでした。
でも昨日、きれいな夕焼けを見ました。
車を運転していて気が付いたので、路肩に寄せて写真を撮りました。
夕焼けの次の日は晴れるってよく聞きます。
ずっとお日様を待っていたので、うれしかったです。
私の好み: I haven't seen sunset in a while because the weather in this region of Japan hasn't been good recently.
SUGGESTION: Add " this region of Japan" since the weather is nice in some parts of the planet Earth.

Do you mean after a beautiful sunset? Grammar is okay, but there's a sunset every day, so I don't know if it makes much sense. Maybe it's just poetic in Japanese. :)
