In general, two words is the best way of putting things but in this case I would prefer one word ”favoritmat”. Sorry, I can’t explain why :).

Jag bor i Arizona där det finns många fantastisk Ma mexikanska restauranger.

Nationality is always written with (in?) a lowercase letter in the beginning (unless it’s the beginning of a sentence).
Both adjectives in plural since you’re talking about several restaurants:
”fantastiska” and ”mexikanska” as compared to ”Det finns en fantastisk mexikansk restaurang” in singular.

Jag skulle kunna äta tamales för resten av mitt liv.

Thank you!! You're right about the titles, i'll start including the prompts! I had no idea about not capitalizing a lot of things in swedish, that makes total sense though i'll try to remember that.

what would kunna mean in this context? i dont think i've ever seen the word. thanks!

A difficult question :)! I think there is a slight difference between English and Swedish here if you translate word by word.
If you say ”Jag skulle kunna äta tamales…” in this context it means like I wouldn’t mind eating tamales for the rest of my life. Is that what you meant or have I misunderstood?
”Jag skulle äta tamales resten av mitt liv” is correct grammatically too but to me it’s like a condition which I expect to be followed by for example ”Jag skulle äta tamales resten av mitt liv om jag kunde” . Does this make sense or have I just made you confused?
