My favourite colour is yellow. Specially if it's mustard-yellow, an old-but-still-trying-to-shine yellow. It reminds of sunflowers, flashy tulips, beautiful melons and delicious juices (in Brazil, there's a fruit called "cajá", their colour is a yellow going towards orange, and it makes a way better juice than orange - and a perfect soda called "cajuína", I recommend it immensely, you will never feel the need of drinking coke again). Back to (talking about) yellow, I feel that it's the perfect soft spot. You don't see it everywhere like green or blue, so it's a refreshing colour, it doesn't hurt (I mean, depending on the shade) your eyes like orange or red, and it's not gloomy as black. Also, if you mix yellow with other colours you can make such a pretty family! I love when it's sunset, and you see yellow with sprinkles of orange and red invading everything: grass, trees, building, people, even dogs on the street. It burns and gives a sensation of being alive.
I heard once that Van Gogh ate yellow paint when he was sad. In my opinion, that's such a bad taste rumour, that tries to make Van Gogh look like a quirky guy when in fact, he was a depressed man that needed help and love. When I discovered Van Gogh I was so enchanted! In art, we often try to use muted colours to make specific colours pop more, so you use a lot of neutrals in order to achieve contrast later when you add the focus of your painting. But Van Gogh wasn't afraid of using a lot of saturation on his paintings... And as someone that loves bringing life to things with a lot of colours, it was instant love! I feel like I started appreciating more and more the colour yellow after seeing his work and the way he uses it. I wish his work was loved that way a bit earlier, while he was still alive. Of course a treatment to mental illness must be deeper than feeling loved and this wouldn't exactly be a solution... but isn't everything we do in life a way to be loved a little more? Maybe knowing at least this would have helped him a bit, who knows.

Specially if it's mustard- yellow, an old-but-still-trying-to-shine yellow.
This sounds more natural; you could almost think of it like "my favorite colour is specifically mustard yellow"

Or "it's not gloomy like black," depending on what you want to say
Also, if you mix yellow with other colours you can make such a pretty family!
I love when it's sunset, and you see yellow with sprinkles of orange and red invading everything: grass, trees, building, people, even dogs on the street.
Depends on what mood you're going for, but I feel like "invading" feels too strong/aggressive/negative... (like you don't want the yellow) Maybe "washing over everything" would be better?

Technically, your version is correct but I think this is more natural

Really great job! Only a few comments here and there; feel free to ask any questions (especially because in some places there were multiple fixes where I didn't leave explanations). I enjoyed reading this; your writing has a nice voice :)
