i just took away the “s” as it talks about one holiday

Induring my holidays, I traveled to the beach with my friends.

i changed “in” to “during” to help show it was through the whole time

We played football there and We windsurfed too.We went to rested and to get away from the routine.

rested is in the past tense but so is went, it makes the most sense to use one thing in the past tense to show you did it already

Or "During my holiday".
"During the holidays" sounds like you went during a time where everyone typically goes on holiday, such as during school holidays, or the end of the year.
"During my holiday" just refers to a time that you specifically took off to take a holiday.

I would word the second sentence as "We wanted to rest and get away from the routine of life back home"

I couldwas able to spend time with my friends and Wwe had fun everyday and We enjoyed our holidays.

Using "I did this.. and I/we did this.. and I/we did this..." too many times in a row sounds a bit unnatural, so I combined the last two phrases.
