It depends on the person I'm talking with

Actually, as I mentioned in the title, it depends on the person I'm talking with , f. For example, when I'm talking with my friends and (the) people I kneow them well, I prefer to share my ideas with them, but I when I'm talking to people (whom) I don't know them(well), I prefer to listen to them more.

(1) This is a very lengthy sentence. I would suggest breaking it up.
(2) The addition of some commas will make the sentence easier to read.

I think you can say "with" but i feel "to" fits better, I guess this is down to preference
