When I call a foreigner in English, I can understand the parts I already know. But when they say something beyond my knowledge, I can’t catch a single word. It feels so strange! How can I fix this issue?

Keep listening is the only thing you can do. I have the same problem with other languages. Maybe familiarize yourself with the individual syllable sounds of the language so at least you know what word was said just not the meaning? Or build up vocabulary.
