我的家人有三个人。我的爸爸很高，有白色的头发。他用电脑工作。我的妈妈最矮。她是老师，但现在不工作。我住在新西兰，我的父母也住在这里。
我有妹妹，她住在中国。她很高，有黑色的头发，又绿色的目。她很胖一下，很漂亮。她和她的加拿大人男朋友是老师。
我有两只猫，一只狗，四只鸟。因为我太忙了，所以没有女朋友。
There are three people in my family. My dad is tall and has white hair. He works with computers. My mum is the shortest. She is a teacher, but doesn't work now. I live in New Zealand, and my parents also live here.
I have a younger sister, she lives in China. She is tall, and has black hair and green eyes. She is bit chubby, and pretty. She and her Canadian boyfriend are teachers.
I have two cats, a dog and four birds. I don't have a girlfriend, because I am too busy.

or 我家有三个人。
我的爸爸很高，有头发是白色的头发。
Because Chinese people's hair is originally black, we generally say that "有白头发" is equivalent to "grey hair". That's clearly not what you're trying to say.
他用电脑工作。
我的妈妈在家中最矮。
她是老师，但现在不工作。
我住在新西兰，我的父母也住在这里。
我有一个妹妹，她住在中国。
她很高，有黑色的头发，又绿色的目眼睛。
or 她个子很高，黑头发，绿眼睛。
她很胖一下，有点胖，也很漂亮。
她和她的加拿大人男朋友都是老师。
我有两只猫，一只狗，四只鸟。
因为我太忙了，所以没有女朋友。

I'm a little confused about the hair thing...my dad's hair was originally black (although he's not Chinese), and now that he's old, it's gone white (with bits of grey) - that's what I was trying to express. So does "有白头发" only apply to hair that's still mostly black but is greying / has white in it?

Correction: 我的爸爸很高。他的头发本来是黑色的，但现在他老了，头发白了 / 有了白头发。
I think "有白头发" means having black and white/grey hair, and it has little to do with the proportion of hair color. If the "hair" changed from black all the way to white, we would just say “他的头发全白了。”

Oh, looks like I misunderstood. Correction: 我的爸爸很高。他的头发本来是黑色的，但现在他老了，头发白了 / 有了白头发。 I think "有白头发" means having black and white/grey hair, and it has little to do with the proportion of hair color. If the "hair" changed from black all the way to white, we would just say “他的头发全白了。”
