A Filipino

I just recalled a female staff member that took care of our dinner at a ryokan in Japan four years ago.
Initially, I thought she was Japanese, but during the second dinner, she spoke English and said she's actually Filipino.
I was shocked to hear that.
That's because her Japanese was proficient and her appearance and behavior seemed like a Japanese person.
I wouldn't have known if she didn't reveal that she's a Filipino.
Apparently, she worked in Japan for over 20 years, and she got used to Japanese culture and habits.
Isn't that amazing?
By the way, the conversation we had with her was apparently her first English conversation in a long time.

I just recallmembered a female staff member thatwho took care of our dinner at a ryokan in Japan four years ago. I just remembered a female staff member who took care of our dinner at a ryokan in Japan four years ago.

A bit more natural: The other day, I suddenly remembered a female staff member who took care of me and my friends at a ryokan in Japan in fours years ago. This phrasing is makes the sentence a bit less abrupt by adding context (the other day I was thinking/I remembered...) and specifies who is included in the "our". Of course, if it was someone else they you would change it to be more accurate.

Initially, I thought she was Japanese, but during the second dinner, she spoke English and said she's actually Filipino.

I wouldn't have known if she didn't reveal it that she' was a Filipino. I wouldn't have known if she didn't reveal it that she was a Filipino.

I agree with the other commentors that you could change this to just Filipino as an adjective, but I think it works either way.

Apparently, she worked in Japan for over 20 years, and she got used to Japanese culture and habits.
