You've mixed your tenses here. I'm not *sure* it's wrong, because present perfect is a bit weird, but it's definitely safer to match. Or you can move forward in time: "The assignment that the professor has given to me is a real challenge." But moving back to the past after the present perfect is iffy.

I can imagine a scenario where it works: You're in class, he gives you an assignment, you complete it while still in the class and start talking about how hard it was. It's still "has given" because he's right there, he gave it to you in this period. But it "was" a challenge because you've done it. Still, better to avoid, I think.

Probably slightly more natural to drop the "to": "that the professor has given me". But it's not necessary.
