no problems in grammar, but "I want to think in Japanese, but I should think in Portuguese and English"...does this what you want to say ?

Yes, that's what I wanted to say, since I get stuck in thinking in Japanese I should think in Portuguese and English and then translate those sentences to Japanese.
日本語でかんが考えたい。でもポルトガル語とえいごで考えるべきです英語で考えてしまう。
I think you are trying to say, "I want to think in Japanese, but I can't help thinking in Portuguese and English". If so, it should be 考えてしまうor 考えてしまいます rather than 考えなくてはならない which means "I must think in....".

I wanted to say I must think in English or Portuguese and then translate to Japanese instead of being stuck trying to form sentences in Japanese. Thank you!

日本語でかんがえたいでも考えたい。しかしポルトガル語とえいご英語で考えるべきですだ。
文末の表現（です／だ）はそろえると自然です。前の部分が『〜するべきだ』なので、ここも『だ』に統一しています。
