今天的感谢
今天我一定可以说「感谢」，因为今天是一个真不错的天。例如，我恨化学课，并今天我最后一次学化学。
除了这个事情以外，我也写生物学考试写得很好。从今天开始，我也没有生物课。这是因为我越来越附近完高中，所以课上选择比较少，没有空间选择这两个课。从明年开始，我只会有物理课、中文课、商务课，英语课、高级数学课和计算机科学。
今天的课又容易又短，所以我也有机会更练习中文。终于啊！我已经几个星期期待不必须复习的时候。再说，今天在生物上我们写考试之后，就一起玩手机游戏。英语课的时候，我一个人读几个故事……很舒服！
我希望星期四和星期五也能这么舒服和方便。
Today I can definitely be grateful because it's been quite a good day. For example, I hate the subject of Chemistry, and today was my last Chemistry class.
Other than this, I also wrote a Biology test very well. From today onwards, I also won't have Biology. This is because I'm getting closer and closer to finishing high school, so choices in regards to classes are getting relatively few in number, and I don't have space to choose these two classes. From next year, I will only have Physics, Mandarin, Business, English, advanced Mathematics, and Computer Science.
Today's classes were both easy and short, so I had opportunities to practice Chinese. Finally! I've already been looking forward to the time when I don't have to revise for several weeks. Furthermore, after writing today's Biology exam, we all had the chance to play a mobile game together. During English class, I read stories alone - quite comfortable!
I hope Thursday and Friday can be this comfortable and convenient.

In Chinese, if we want to express the gratefulness, in particular for what happened, we normally would use 感恩 or 感激 instead of 感谢.
今天我一定可以说「感谢」，因为今天是一个真不错的天是值得感恩的一天，因为发生了很多好事情。

Here, using 时间 would be more natural.
In Chinese, 机会, though translated into opportunities or chances, means more like a timing of action. It is short and sudden.
E.g. 我下学期要去意大利交换了，趁着这个机会，我打算学点意大利语。Here we emphasize the action of exchange, hence we use 趁着这个机会.
To compare:
1. 我下周就要离开上海了，在那之前，不知道你有没有时间，我们约顿饭？
2. 我下周就要离开上海了，在那之前，不知道我们有没有机会约顿饭？
我已经几个星期期待不必须复习的时候。不用再复习了！
In Chinese, after several exams, we may say:
我终于考完了！
我终于不用再复习了！
我解放了！= I am released/free!
再说，今天在生物上我们写考试之后，就另外，考完生物后，我们聚在一起玩手机游戏。

Gratitude for what happened today is not a common topic in China, at least in my experience. Hence, I actually struggled with the correction for the first few sentences, because I do not really express this kind of emotion in my mother tongue. But I am glad that you proposed this idea in Chinese and I reflected myself as well.
In Chinese, we have a related concept that was popular a few years ago, called “小确幸”. It means 微小而真确的幸福, the small and simple happiness.
I quoted a few lines from the net so that you may get an idea of what 小确幸 means:
”小确幸就是这样一些东西：摸摸口袋，发现居然有钱；电话响了，拿起话筒发现是刚才想念的人；你打算买的东西恰好降价了；成功地磕开了一个鸡蛋；吃妈妈做的炒鸡蛋；排队时，你所在的队动得最快；自己一直想买的东西，但是很贵，一天你偶然的在小摊便宜的买到了；当你运动完后，喝的冰镇透了的饮料。它们是生活中小小的幸运与快乐，是流淌在生活的每个瞬间且稍纵即逝的美好，是内心的宽容与满足，是对人生的感恩和珍惜。当我们逐一将这些“小确幸”拾起的时候，也就找到了最简单的快乐与幸福。“
One additional comment regarding the usage of 上课 and 有课:
1. 有课—> have classes, more like a status
E.g. 你周五有课吗？
E.g. 我下午有节数学课。
E.g. 明天有英语课吗？
2. 上课—> go to classes, more like an action.
E.g. 周末不上课。
E.g. 我们下学期一起上统计课吧！

There are direct translations to gratitude in Chinese, which can be 感激、感恩. But we rarely talk about it and it indeed feels awkward to use these phrases to express feelings. It feels way too serious. Normally, we would just say that I had a happy day today = 我今天过得很开心. But maybe we should start being grateful in Chinese! ☺️
