今日は２０２５年９月２９日で、月曜日です。天気は晴れのち曇りで、気温は１３度です。最近はちょっと難しかったです。仕事が忙しいし、料理するのための時間がないし、ずっと悲しくています。それで他の州からで、ここに友達を持ちません。彼女がいるけど、たぶんじゃないと思います。明日はもっといい日を希望します。
Today is Monday, September 29th. Weather is sunny and cloudy, temperature at 13 degrees. It's been a bit difficult as of late. I've been sad due to work being busy and not having time to cook. Since I come from another state, I don't have any friends here. I have a girlfriend but I don't think that's enough. I sure hope tomorrow is better.

難しい is used mainly for specific things, e.g. 日本語は難しい。Here 大変 = hard fits a bit better.
仕事が忙しいし、料理をするのための時間がないし、ずっと悲しくていまいです。
それでして私は他の州から来ているので、ここには友達を持ちがいません。
彼女がいるけど、たぶんじゃ多分それだけだと足りないと思います。
A more polite way of saying this sentence would be 彼女がいるけど、多分それだけだと寂しいと思います。寂しい - feel lonely.
明日はもっといい日であることを希望しています。
A better word than 希望 would be 期待 - anticipate, hope for
