Why did you replace fatha with kasra in the last sentence?

because in arabic, when we use two nouns together to form a possessive relationship, like "orange juice" we use something called الإضافة (the construct phrase).
In this construct:
the first noun (the thing possessed) is always without "ال" it must be indefinite (no "ال")
the second noun (the owner) can have "ال" if it's definite
and if you're still curious why is "أنا أشربُ العصيرَ البرتقالَ" wrong?
here why:
You put "ال" on "عصير" and it makes it definite
but then said "البرتقالَ" as a separate word.. it looks like you're just putting two separate nouns with no grammar linking them.
this sounds like saying in english:
"I drink the orange the juice"
unless you mean "برتقالَ" here as an adjective, like you mean "orange" as a color not a fruit, I know you might made a mistake understanding the adjective and the noun because both their form and pronunciation are similar, but still even in the form the adjective "برتقالي" as a color is different from the "برتقال" as a fruit.

I agree about the vowels that this is tiring. At the same time I don't know what are the important places (where it's better to put a vowel for the clarification of meaning), that's why I write them everywhere.
Also vowels help to not confuse the grammar (especially in the beginning), for instance for the word 'orange': after I put vowels in the end it's clear that this is al-manṣūb.
Also why do we have to eliminate al- in the word 'juice'?

Do you mean that we don't have to make both (the adjective and the noun) definite?
I know the rule that an adjective and an noun should be in agreement with each other (meaning that if one is definite, the other one should also be definite)

Yes, great question!
Normally in Arabic, the adjective agrees with the noun in definiteness.
So if the noun has "الـ" (is definite), the adjective should also have "الـ".
In your sentence:
العصير البرتقال → both words are definite.
But "برتقال" is not really used as an adjective here — it's more like a kind of juice (orange juice).
A better way to say it would be:
عصير البرتقال (Orange juice – genitive structure / إضافة)
or
العصير البرتقالي (the orange-colored juice – adjective)
So in your sentence, if you say العصير البرتقال, it sounds a bit odd in Arabic grammar.
